產地在Yirgacheffe region, 鄰近Idido的小產區, 咖啡樹多屬野生種(over 20 varieties in the selection)與Enset (false banana, 一種貌似蕉樹的植物)間作. 風味走向屬發酵感較重的莓果味, 恰如其名Ambassa (當地是指"雄獅"的意思), 在Micro Lot中是較powerful的一款!

Roasting:


As with all high-note, small seed naturals like this example, one must roast gently due to high surface area, especially when the seeds are of very low density (this will show as a inconsistent development, especially during the first crack). Ensure that the 1st crack arrives evenly and in less than 8 minutes. This will require good airflow and sufficient BTU. Second crack should not be approached, although a deep caramel to reddish tan color should show on the finished seeds. The finish of the roast should be no more than 3 minutes beyond first crack. This period is where the roaster must develop the aroma, sweetness, and some body in the cup without burning and without leaving the seed with a grainy, raw finishing flavor. No oil should leach after 3 days.

Notes:

Aricha Selection Seven is an amazing fruit bomb of Ethiopian natural coffee selected by Joseph Brodsky of Ninety Plus Coffee Company. Grown by farmers located between 1850 and 1900 meters in the Aricha locality, Yirgacheffe. In Ethiopia, there exists an incredible diversity of coffee varieties, both wild and domesticated. It is estimated that Ethiopia has literally thousands of coffee varieties. (The wild Aricha Selection Seven includes 23 varieties.)


Ninety-plus Coffee works with its producing partners, farmers, agronomists, processors to develop tiny lots of unique, superior coffee - those that command high values. Producers are never paid less than double fair trade minimum prices. They use special Natural Sundried technique, where cofee is sundried in its fruit for quite a long time, rather than being peeled and washed before drying. This is the most ancient way to prepare coffee, but it has fallen out of favor, since it is difficult and risky. It's easy for coffee to develop off flavors during sun drying - if the charries mold or rot it gives the coffee a woody, dirty flavor. But Ninety-plus perfects the Natural Sundried style to get a special preparing. The coffee is perfect. The result is spectacular. With an almost infinitely complex fruitiness, They call it Honey B. Processing.


Aricha Selection Seven is the most flowery and juicy coffee of all micro lots. It's the second of four coffees Ninety Plus air-freighted to U.S. and also the second flew to Taiwan. The Selection will be no longer than ten traditional bags (600Kg).


The Aricha Seven is very fruity and floral with juicy acidity and a surprisingly creamy body as it cools. The freshly ground coffee has an intense fruity aroma and lemongrass combined with baked banana bread. Explosive orange citrus, strawberry undertones, juicy acidity, and mouthfeel that gets increasingly creamy on cooling. The sweetness is a flavor of ripe berry (blue & red), citrus and sometimes peach or grape juice. Winey with pleasing, lingering finish. Very bright.


Aricha Selection Seven received Coffee Review's 95 points rating. Coffee Review awarded 95 points to two separate roasters. Ken Davids' wrote this about Aricha: "No hints here: The aromatics are direct, inescapable, lavish. Lushly intense blueberry, chocolate, and floral-toned honey in the aroma. In the cup the incendiary aromatics are influenced by wine-like acidity that turns the berry and chocolate notes crisp and richy dry. The fundamental berry and floral notes linger with surprising clarity in the finish, although they are outlasted by a slight but forgivable astringency."


Roasting advice:

Roast (Agtron): Light (63/86)

Keep the roast on the light sid, like a City but not FULL City Roast to maximize the fruit and subtler element of the coffee, which will be diminished by darker roasting.

Two points worth considering:

1.- To get the optimum fruity flavors, the roast must not go beyond the end of first crack. Stop the roast as early as you dare.

2.- Aricha Seven is beautiful at 3 to 10 days out of the roaster. After the 3rd days, the flavor really comes together.
